Who doesn't crave a bagel, muffin or scone every once in awhile?

Although I eat pretty healthy, most people I know do a daily Starbucks run and on top of the their tea or coffee, find it hard to resist a muffin or scone on their daily stop.

A reader of mine shared a muffin recipe with me that's a healthier option. It eliminates dairy, sugar and flour, but is extremely satisfying when looking for a carb on the go.
